Savoury Meat Loaf

175g Streaky Bacon
225g cooked meat minced
40g packet bread sauce mix
15g cornflakes, crumbled
25g Onions, skinned and chopped
1/2tsp dried mixed herbs
1 tbsp tomato puree
150ml (1/4pt) milk
Salt and Pepper
1 egg, beaten


Butter a loaf tin and line with rashers of bacon.  Mix together minced meat, bread sauce mix, cornflake crumbs, onions, herbs and tomato puree.

Add milk and seasoning to beaten egg and stir in to the dry mixture.  Beat well.  Turn in to prepared tin.  Bake in a preheated oven (200C) for 1-1 1/2 hrs covered with foil.
Turnout and serve hot or cold

Serves four – and as a left over meal comes in at around 50p, per person, depending on how your store cupboards are filled.
