Hungarian Supper

200g Frankfurters, cut in to 2 inch pieces
200g Salami, chopped
25g butter
1 tbsp soy sauce
2 tbsp lemon juice
3 tbsp oil
2 sliced onions
200g button mushrooms
2 apples cored
1 tbsp flour
Salt and Pepper
1/2 tsp paprika
1 1/2 tsp caraway seeds
1/2pt cider
250g carrots cooked
200g noodles


Put the frankfurters and salami in a bowl.  Add soy and lemon juice and leave to marinate for 2 hours basting occassionally.  Drain and reserve marinade.

Heat oil and gently fry onions until soft.  Ad mushrooms and apples and saute.  Stir in flour, salt and pepper, paprika and caraway.  Gradually add cider, stirring, bring to the boil.  Simmer for two minutes.  Stir in marinade.  Put Frankfurters and salami in casserole dish and pour over sauce, cover and cook in a moderate oven (170C) for 35 minutes.  Add Carrots and cook for a further 5-10 minutes.

Cook noodles in boiling water – drain. Arrange and serve.


Serves four.
