Roast Chicken Pieces

8 Chicken Pieces (depending on whats on offer) either breasts, legs or thighs
2 Lemons
2tbsp Runny Honey
2 Sprigs of Rosemary or 6 sprigs of thyme.

Place the chicken pieces in a large baking dish, skin side up,
In a seperate bowl mix the juice of the lemons with the honey and pour over the chicken pieces
Place the lemon pieces in the baking tray with the chicken pieces. along with the herbs and season

Cook in a preheated oven (180C) for 40 minutes until the skin is golden and the chicken cooked through.

Taking the juices from the pan, transfer to a saucepan and boil for about 5 minutes until the juices have thickened.

Serve the chicken with the sauce poured over the top.


Serves four = £1 per head depending on how much you pay for the chicken
