Tonight I needed a sausage dish which cooked itself. This one does the job brilliantly!  So next time you need your dinner to cook itself, try this…

Taking one packet of thick sausages (Allowing for two per person), 750g of new potatoes (I halved mine because they were quite big) and one large Onion (I had a large spanish onion, but a red one would enhance the overall look of the dish.

Add to a roasting pan with a good few twists of black pepper, some rock salt and some mixed dried herbs and/or sprigs of fresh thyme. 

Toss the ingredients together, with two tablespoons of olive oil and then place in a preheated oven (220C) and cook for 20 minutes.

Toss all the ingredients again and add 100ml of red wine and return to the oven for a further 10 minutes.

Serve with peas or beans, brocalli or something else green.

This dish cooks itself and is easy to eat in front of the tv (especially if you cut the sausages in to pieces before you leave the kitchen!). The finish with the red wine gives the dish a lovely rich taste, but the dish would be equally delicious if you serve it with gravy.
