Sausage and Potato One Pan Casserole

My favourite thing on a Saturday evening is a one pot, one bowl recipe.  If the ingredients include sausages then there are a lot of boxes ticked before you even start.

Tonights sausages were shortcoded so were a 50% off so the meal overall came in a mere £2.00

Fill and boil the kettle, Cut 8-10 new potatoes in half and add to a saucepan cover with the boiling water and simmer for 8-10 minutes.  Drain.

Heat a couple of tablespoons of oil in a large flat frying pan and brown the sausages on all sides.  Add one sliced onion, potatoes 

Add a jar of tomato pasta sauce and rinse the jar out with about 1/6 of a jar of water, Allow to to simmer with the lid on for around 10 minutes to make sure that the potatoes are totally cooked.

Take the lid off and reduce the sauce down for a further ten minutes.  

I tend to take the sausages out during this last ten minutes and cut each one in to four chunks before returning to the pan.

Serve in bowls with a fork, and napkin and eat on the sofa with your feet up, watching Twilight.
