Way backon the 8th February 2012 I first made this dish, tonight at the end of Red Lentil week I made it again.
Tonight we cooked the lentils seperately and stirred them in to the onion and tomato mixture, added fresh Coriander and chopped sundried tomatoes.
As it was a Friday we served it with a few chips and a couple of pieces of garlic bread. Â Its a bit of a Carb overload, but all the veg were in the dish andÂ hay!Â its Friday…
