Pasta tonight. Â Â Spinach and Bacon with a touch of heat from a chilli flakes.
Meal for four for less than Â£1 a head, with pasta left over for a couple of lunches.
Tasty meal, which we finished with some garlic dough balls and for the kids a little grated cheese……………because as we know, you have to have cheese on Pasta ….
Cook the pasta as per the packet instructions.
Meanwhile, chop up a 200g (6 rashers) of back bacon and fry in a heavy bottomed pan until just beginning to turn golden.
Crush and chop a couple of garlic cloves and add to the bacon with a teaspoon of chilli flakes.
Drain the Pasta and return to the pan. Tip in the whole bag (200g) of prewashed spinach leaf and put the lid on, leaving the pan off the heat.
Stir the pasta every minute or so until most of the spinach has wilted down, Tip the bacon in and stir well. Â Put the lid back on and leave for a minute or so until all the spinach is wilted and serve immediately.
