Chicken Skewers,with a peanut dipping sauce

From time to time you will be lucky enough to buy shorted coded chicken at greatly reduced prices.  Buy as much as you can afford, or know you can get in the freezer, and when you want a slightly different family meal try this chicken dish with this seasons New Jersey Potatoes or a more frugal ‘year round’ option would be chips (either home made from last seasons potatoes or shop bought) and peas or a seasonal salad.

If you dont try this until the summer try it on the BBQ and use the peanut sauce as a coating sauce for the meat whilst cooking too!!

You will also need 4 skewers either bamboo (soak in water for 30 minutes to prevent them burning) or metal meat skewers


8 mini chicken breast fillets
6 tbls of peanut butter (either crunchy or smooth)
1/2 an onion
1 garlic clove
Dash of Tabasco, to taste
1/4 pint of vegetable stock
2 tbls of light soy sauce
2 tsps lemon juice
Marinade (optional, if you have the ingredients in the fridge and the time)
4-6 tbs Olive Oil
3 tbls Lemon Juice
Garlic clove (crushed) or squeeze of Garlic Puree
Mix together with fresh herbs of your choice if you have them, and marinate the chicken for 20-60 minutes

Slide two chicken fillet strips on to each skewer.
Put the Skewers on a rack or across a narrow banking tray – and place in a preheated oven (180C) for 20-25 minutes (this will also be the amount of time you need to cook the oven chips, if using, or to boil the potatoes, so put it all on together).

Place all the rest of the ingredients in to a liquidiser and blend to a smooth consistency.  Put in to a small saucepan and heat through, stirring from time to time.
When the sauce starts to begin to bubble take it off the heat and allow to cool.

Serve a small dipping pot of sauce to each person (ramekins work well here) with one skewer of meat per person.  If using metal skewers, (or serving to young children) I suggest you remove the skewers first – metal skewers retain their heat too well and are likely to burn fingers.


Serves Four – and if you can get the chicken for around £2 you should come in for the meal at around £1 a head, or less depending on your sides.
