1 tbsp oil
1 Onion, Chopped
2 Garlic Cloves, Chopped
1 Red Pepper, Chopped
150g Minced Beef
400g tinned chopped Tomatoes
Tomato Puree or Ketchup
1 Large tin Kidney Beans
2 Large Carrots
1 tsp each Ground Cumin, Paprika, Dried Chillies, Ground black Pepper
Packet of 8 flour tortillas
50g Cheddar cheese, grated
Pre-heat the oven to 180C
Heat a Tablespoon of Oil in a frying pan. Add 1 chopped onion, two chopped garlic cloves and a chopped Red Pepper.
Cook over a low heat stirring occasional for about 5 minutes until the pepper has softened
Increase the heat and add the beef left over from Wednesday, breaking it up with a wooden spoon until browned.
Reduce the heat and add 1 can of chopped tomatoes, a couple of tablespoons of tomato puree or ketchup, a tin of drained Kidney beans, and two large carrots grated.
Season with spices and pepper
Cover and simmer for 20 minutes
Divide the mixture between the Tortillas and Roll up. Place each wrap in a greased baking dish and sprinkle with Cheddar Cheese, and bake in the oven for around 10 minutes until the cheese has melted and started to brown.
