frugal cooking



4 tbls oil
2 Onions
3 cloves of garlic
2.5cms piece of fresh ginger
1 tbsp curry powder
500g minced Beef
5cm piece of cinnamon stick (optional)
1 Bay leaf
400g tin of chopped tomatoes
Salt and ground black pepper
Rice to serve



Heat the oil in a heavy based saucepan.  Fry the onion and garlic and ginger, for 3-4 minutes on a medium heat.
Stir in the curry powder and fry for a further minute

Add the Minced beef and increase the heat, browning until cooked, stirring occasionally.

Add in the cinnamon, bay and tomatoes, stir and simmer for 45-60 minutes.

Remove cinnamon and bay leaf prio to serving with rice and naan.

Serves Four


Note - don't be afraid to make this dish in advance, the flavours will improve on keeping in the fridge for a day or so and thoroughly re-heating
