Chilli Bean Moussaka or is it a Lasagna

I had the Diary Diary book of Home Cookery out tonight.  I had planned to make their Chilli Bean Moussaka.....but it didn't quite work out like that.

Firstly, whilst we don't mind Aubergine, there really is no need for two in a dish for four people.  I also don't like Aubergine unless it's been griddled rather than 'stewed', so some amendments had to be made to the original recipe. 

Even more creative wizardry came along when the recipe asked for a tin of Kidney beans in a Chilli Sauce, as I only had kidney beans and two chillis

Finally, we finished the dish with Goats Cheese, as we had some in the fridge which needed using up.

Thickly slice the Aubergine and Griddle

Meanwhile Peel and slice one large, or two small onions, and three garlic cloves.  Additionally finely chop two chilli's

In a large saucepan saute the onions/garlic with the chillis and a tablespoon of Paprika, and dried oregano

Add a Tin of chopped Tomatoes and a tin of Kidney beans (drained) add the aubergine and simmer for twenty minutes.

Meanwhile, preheat the oven to 180C 

In a bowl add 1/2 tsp of Cinnamon and 1tbsp cornflour.  Mix with 150g natural yoghurt and 150ml of milk, a little beaten egg and a pinch of nutmeg.  Grate in 50g of Red Leicester Cheese.

 

Either Layer the bean mixture with a couple of layers of Lasagna, or just put the bean mixture in a baking dish and finish with the cheese mixture.

Bake in the oven for 40 minutes and ensure its piping hot before serving with peas and salad, or if you are similar to my Husband it needs Chips
