Preheat the oven to 200C.
Tip, 750g new potatoes (halved, not peeled), 1 onion (sliced in to half moons), 1 garlic cloves, (peeled and sliced), dried or fresh thyme (approx 2-4 sprigs), 2 tbsp olive oil in to a roasting tray.
Add a packet of sausages and toss everything in order to coat thoroughly.
Bake in the oven for 20 minutes until the potatoes and sausages are cooked through.
Pour in 100ml red wine and cook for 5-10 minutes until the red wine is reduced to a sticky glaze.
Serve with broccoli or peas.
