4 Chicken pieces (thighs work well)
1 tsp Cumin Seeds
1 tsp Coriander Seeds
1 tsp Cardamon Seeds
12mm piece of root ginger, peeled and crushed
2 large cloves of garlic
2 tsp paprika
150ml thick yogurt
Skin the chicken pieces, and slash the flesh with a sharp knife to allow the marinade to penetrate the flesh.
Dry roast the seeds and grind then add all the ingredients (other than the chicken) to a food processor and blend. Add a couple of drops of red food colouring if you have it.
Add the chicken and marinate in the fridge for 24-36 hours
When ready to cook, grill under a high grill for 15-20 minutes turning occasionally basting with left over marinade.
This recipe also works well with Chicken breast, to make chicken Tikka, cut the meat in to chunks and thread on to skewers prior to grilling for 10-12 minutes
