Ingredients
4 Pork chops
2 packets of Lemon Couscous
2 Courgettes, grated
Lemon Wedges, to serve
Method
Preheat the grill.
Fry the Pork chops standing on their rinds, until the fat has started to crisp up.
Put the Pork chops in a grill pan and place under a moderate to hot grill to cook.
Make up the Lemon Couscous as per the packet instructions. Keep Warm.
Fry the Courgettes in a lightly oiled pan until just beginning to brown, and then mix in to the Couscous.
Plate up the Couscous and place a grilled pork chop on top.
Serve with lemon wedges
