How many of us from time to time find ourselves in shops and decide to buy something that you see on the shelf and then wonder what to do with them.
My weakness is dried pulses.
However the idea of buying dried chickpeas has slightly back fired, because I usually buy tinned chickpeas when I need them …..for speed
However, last night I remembered to soak a couple of handfuls (by that I mean two single cupped palms) and then this morning ensured a 10 minute hard rolling boil and then a further 50 minutes of simmering, which was fine, but what now……?
Preheat the oven to 190C
Heat two tablespoons of vegetable oil in a roasting tin, and add 3 sliced onions, a couple garlic cloves (crushed and sliced), two chopped carrots, two medium potatoes cubed and 12 chipolata sausages. (I also added the end of a jar of sundried tomatoes I just happened to have in the fridge)
Toss to coat and bake in the oven for thirty minutes.
Remove the pan from the oven stir well, add 300ml of vegetable stock and a 400g tin of chopped tomatoes and the chickpeas, stir well and return to the oven for 30 minutes.
Make up 3-4 tablespoons of fresh breadcrumbs (I used up some of last nights left over soda bread). Stir the cassoulet, sprinkle over the breadcrumbs and dot with butter. Return to the oven and bake for a further 15 minutes until the top is golden
Serve piping hot – we served ours with my first attempt and Sour Bread….!
