This is a perfect way to use up chicken. You can make it with chicken breast strips, but to be frugal try it with Chicken Thighs. Yes its fiddly as you have to take out the bone and remove the skin, leaving a square of chicken flesh, but it is worth the trouble. Work on two thighs each.
8 Chicken Thighs, boned and the skins removed
50g of hard cheese, Parmesan is nice, but this will also work with cheddar.
50g of white breadcrumbs – or work on breadcrumbs made from two large slices of white bread
50g of flour – plain ideally. Season with salt and pepper
1-2 eggs beaten
Preheat the oven to 180C
Get out two plates, put flour on one, and combine the breadcrumbs and cheese together and put on the other.
Put the beaten egg in to a bowl.
In turn flour the chicken, place in the egg, and then put on to the plate with the breadcrumbs and coat all over.
Put each coated chicken piece on a grill pan – or oiled foiled, baking tray, and pop in the oven and bake until golden.
If you remember, turn during baking, as this helps to prevent the coating peeling off on serving.
